Beef & Vegetable Noodle Bowl


One of my favorite easy and healthy dinners is some sort of meat and rice or rice noodle bowl. You can change it up so easily with sea food, beef, chicken or tofu. You can use rice noodles, brown rice, jasmine rice. You can put in virtually any vegetable you have on hand, fresh or frozen. You can use teriyaki sauce, peanut sauce, red chili sauce. The possibilities are endless! For today, we have beef & rice noodles in teriyaki sauce.


I have tried fresh and dried rice noodles and I think that dried are much easier to work with. The biggest problem you'll have when making rice noodles is over cooking them. I find it's much easier to overcook fresh noodles than the dried. As soon as they're over cooked they turn into a sticky, mushy mess. No good. I found these dried rice noodles at WinCo and the teriyaki sauce at Trader Joe's. Our new favorite is actually the Island Teriyaki sauce though. 


Thinly slice 6-8 ounces of beef. We used petite sirloin, but you can also use flank steak or skirt steak. Put the beef into a bowl and mix with teriyaki sauce and 2 cloves of chopped garlic. Ideally you want to let this marinade overnight, but at least for 2 hours before cooking.


When you're ready to cook bring a medium pan over medium-high heat. Add the beef, sauce, garlic mixture and cook for just a few minutes or until the beef is to your desired doneness.


Bring a pot of water to a boil. Remove the pot from the heat and add your dried rice noodles. Let them soak for just a few minutes. You want them to be al dente (just a little bit firm). Strain and rinse under cold water. Add the noodles back into the pan with the beef and mix together. 

If you're adding cooked vegetables, add them here. You may want to add more teriyaki sauce at this point as well.


Top with sesame seeds and enjoy!

1/3 cup teriyaki sauce
2 cloves garlic, chopped
1/3 package rice noodles (enough for 2 servings, depending on package of noodles)
6-8 ounces thinly sliced beef (petite sirloin, flank steak or skirt steak)
1 cup frozen or fresh vegetables of choice
sesame seeds for garnish

Thinly slice beef and mix with chopped garlic and teriyaki sauce. Let marinade in the fridge for at least 2 hours, ideally overnight. Cook beef over medium-high heat for just a few minutes or until desired doneness. Bring a pot of water to a boil. Remove from heat and soak rice noodles for just a few minutes. You want to remove them just before they're done. Strain and rinse under cold water. Add noodles and cooked vegetables of choice to pan with beef. Toss and add more teriyaki sauce if desired. Top with sesame seeds and enjoy!
