Chicken Fajitas


Mine and Dan's go to meal is tacos or fajitas. It's cheap. It's delicious. It's mostly healthy. One way we love to make chicken tacos is in the crock pot. We put a few chicken breasts in the crock pot with taco seasoning and a little bit of water. Turn it on low for 4-6 hours. During the last hour I shred the chicken and put it back in to soak up all the juices. These are so delicious and are great for feeding a large amount of people. I'll probably put these up at some point, but for now...Chicken Fajitas!



I prefer fresh vegetables to any of them frozen, but living with my oh so picky boyfriend, it makes more sense to have frozen ones on hand for just me. I used this frozen mixture of red, yellow and green bell peppers. It's nice to also throw in an onion and if I were making them fresh, I would have.


Grab what ever toppings you prefer. I like an avocado and plain greek yogurt. Salsa, cilantro, mango salsa, etc would be delicious as well.


Grab either corn or flour tortillas. Dan and I prefer corn.


Chop up one large chicken breast into small, bite size pieces.


Saute over medium-high heat with taco seasoning and a few tablespoons of oil for 5-7 minutes, or until fully cooked.


In a separate pan, saute bell peppers over medium-high heat with taco seasoning and a tablespoon of oil for just a few minutes.


Brown each tortilla over medium heat sprayed lightly with oil. Cook for about a minute each side.


Put it all together and enjoy!

Chicken Fajitas
1 large chicken breast, chopped
6 small corn tortillas
2 tablespoons taco seasoning (use package or see below)
1/2 cup frozen bell peppers or 1 fresh bell pepper, chopped
1 avocado
shredded cheddar cheese
plain greek yogurt

Saute chopped chicken over medium-high heat with 1 tablespoon taco seasoning and 2 tablespoons oil for 5-7 minutes or until fully cooked. Saute bell pepper over medium-high heat with 1 tablespoon of taco seasoning and 1 tablespoon of oil for 3-5 minutes. Heat up each tortilla over medium heat lightly sprayed with oil. Heat each side for about a minute, or until golden brown. Fill each tortilla with chicken, bell peppers, shredded cheese, avocado, and a dollop of plain greek yogurt. Enjoy!

1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon oregano
1/2 teaspoon paprika
1 1/2 teaspoons cumin
1 teaspoon salt
1 teaspoon black pepper
