Caprese Sandwich

It's so crazy how fast your body can acclimate to different temperatures. When we first moved from Oregon to Arizona we were dying, it probably didn't help that we moved here smack dab in the middle of July when the high is 110 degrees and you're lucky if the low drops below 90 degrees. Now while half of the country is suffering way below freezing temperatures, I'm somehow cold with our 55 degree weather. Pretty ridiculous, I know. Back to's a simple and delicious vegetarian dish, a caprese sandwich!

Grab your favorite bread or whatever bread you have on hand.

Slice up some fresh mozzarella and a tomato and grab a few basil leaves.  

I don't know about you, but a little salt and pepper makes tomatoes so much better! You can leave them plain if you'd really like to though. 

Layer on the mozzarella...

...then basil. Drizzled some balsamic glaze over the top. You can use balsamic vinegar, but I think the glaze makes this sandwich so much better.

I love to serve this sandwich with a small bowl of sweet potato bisque.  If you've never tried this before, go and get it right now. It's so freaking delicious! Simply heat it up in the microwave and top with a little bit of plain greek yogurt.

Fresh mozzarella 
Fresh basil
Balsamic glaze
Salt and pepper

Slice tomato and mozzarella. Layer ingredients on bread and top with balsamic glaze. Serve with sweet potato bisque and enjoy!
