So I know I asked what could be better than a gift that can be eaten, well here it is. A gift that can be eaten that is made with rum! Oh yeah, we're making rum balls today! I remember years back my mom and I made some coconut rum balls that were to die for. I was more in the chocolate mood though so I went with these traditional rum balls. I got the original recipe from The Joy of Baking.
Gather up some vanilla wafers, powdered sugar, cocoa powder, honey, rum and chopped nuts of your choice. Again I got Trader Joe's Ultimate Vanilla Wafers, they are so amazing! These rum balls tasted very similar to my Tiramisu Cookies since I combined these vanilla wafers with chocolate and alcohol again.
If you're fancy then crush the vanilla wafers in a food processor. I used my blender and it did the job perfectly.
You want them to be crushed pretty small
Also crush your nut of choice, I used pistachios. You can leave these in slightly larger pieces than the cookies.
Combine the crushed cookies, nuts, powdered sugar and cocoa powder.
Add in the honey and rum and mix until fully combined. Let the mixture chill if the fridge for at least 15 minutes. This will make the dough easier to roll into balls.
Since I was giving this away for Christmas, I used these cute mini muffin liners to hold each rum ball. You can also set them on a cookie sheet lined with wax paper.
Roll the dough into small balls and coat in a topping of your choice. I used cocoa powder and powdered sugar. You can also use chopped nuts, sprinkles, or dip them in melted chocolate. Place them in each mini muffin liner or onto a cookie sheet. Place back into the fridge until serving.
These were so rich and delicious! I didn't want to give any away! You might want to make a double batch so you have some extras.
1 1/4 cup crushed vanilla wafers
1/2 cup chopped nuts
1/2 cup powdered sugar
2 Tablespoons cocoa powder
2 Tablespoons honey
Finely crush vanilla wafers in a food processor or blender. Chop nuts. Combine vanilla wafers, nuts, powdered sugar and cocoa powder. Add honey and rum and mix until fully combined. Chill in the fridge for at least 15 minutes. Roll the dough into balls and roll in topping of your choice (powdered sugar, cocoa powder, chopped nuts, sprinkles, etc). Place each ball in a mini muffin liner or a cookie sheet. Place the rum balls back into the fridge until serving.
