Chocolate Mint Cookies

When I was little my mom used to make these chocolate cookies and melt a marshmallow on top then cover with frosting. Yummy! I decided to make the same chocolate cookies, but add mint and chocolate chips to them instead of the marshmallow and frosting. I love the combination of chocolate and mint, who doesn't? Thin Mints never lasted very long in my house! What's great about this recipe is how easy it is! These cookies are made out of a boxed cake mix.

Grab one box of devil's food cake mix, some plain greek yogurt, eggs and mint chips. I couldn't find any mint chips, but I did find this bag of dark chocolate AND mint chips. 

Mix together the cake mix, yogurt and eggs until fully combined.

Next, add in the chips!

And that's it! I told you it was easy. Drop tablespoon size amounts of dough onto a cookie sheet. Careful not to place them too close to each other, they do spread while cooking. These in the photo were a little too close. Bake for 12 minutes at 350 degrees Fahrenheit.

They're a little funny looking, but they are yummy! They aren't the normal dense, chewy cookie. Since they're made with a cake mix they're lighter and more fluffy.

Chocolate Mint Cookies
1 box of devil's food cake
1 10 oz package of mint chips
2 eggs
2/3 cup plain greek yogurt

Preheat oven to 350 degrees Fahrenheit. Mix cake mix, yogurt and eggs until fully combined. Add chips. Drop tablespoon full amount of dough onto a cookie sheet. Cookies will spread when baking, place 2 inches apart. Bake for 12 minutes. Enjoy!
