I have made these cookies so many times. I just can't seem to get enough. My all time favorite food for dessert or just a snack are cookies. These cookies are full of lemon zest and juice. They are sweet and tangy and very chewy. I have tried these without the lemon as a regular sugar cookie, very delicious. I have really been wanting to try this recipe with lavender instead of lemon. Sounds good.
I originally found this recipe on Pinterest back when I very first started pinning. The only thing I changed in the recipe today was I used whole wheat flour instead of white flour. It tastes exactly the same, but it makes the cookies look a little brown. I like the look of them better using white flour.
Start by mixing together the butter and sugar until fully blended.
Add in the egg, vanilla, lemon zest and lemon juice. Mix again until fully combined.
In a separate bowl whisk together flour, salt, baking soda and baking powder.
Slowly add the dry ingredients to the wet ingredients and mix until combined. Again, my batter is a little brown since I used whole wheat flour. My mixture actually looks a lot like brown sugar and butter mixed together.
Take teaspoon size balls of dough and roll in powdered sugar.
Place each ball of dough on a greased baking sheet or lined in parchment paper. Place dough about 2 inches apart.
Place cookie sheet in a 350 degree Fahrenheit oven and bake for 9-11 minutes. This recipe will make about 2 dozen cookies.
