One thing that Dan is ALWAYS craving is BBQ food. I think he needs to move to the South. If he could, he would eat BBQ ribs or BBQ pulled pork or BBQ chicken every, single night. Don't get me wrong, I love it too, just maybe not every night.
We made some BBQ pulled chicken in the crock pot. I stuffed it into a sweet potato and Dan made little BBQ chicken sliders. You could easily do pulled pork, chicken is just a cheaper option.
Start by placing 8 chicken breast tenderloins (frozen or thawed) into a crock pot. Pour 1/3 cup of your favorite BBQ sauce on top along with 1 teaspoon Worcestershire sauce, 2 teaspoons BBQ rub and 1 teaspoon liquid smoke. I also added about 1/2 teaspoon of Trader Joe's South African Smoke seasoning which is a combination of basil, garlic, paprika flakes and salt.
Turn your crock pot on low for 4-6 hours, 6 hours if using frozen chicken.
During the last hour, remove the chicken, shred it and add it back to the sauce for the last hour.
In the meantime, take 4 medium sweet potatoes and pierce with a sharp knife. Microwave on high for 4-5 minutes for first potato and an additional 2-3 minutes for each extra potato, then check. May need to microwave for longer. Or you can bake for 45-60 minutes on 400 degrees Fahrenheit.
Once your potatoes and chicken are done you're ready to put it all together! Cut the sweet potato in half and pile on the BBQ chicken. You may add additional BBQ sauce if you prefer. I topped mine with a little bit of shredded cheddar cheese and a dollop of plain Greek yogurt.

BBQ Chicken Stuffed Sweet Potatoes
8 chicken breast tenderloins
4 sweet potatoes
1/3 cup BBQ sauce
2 teaspoons BBQ rub seasoning
1 teaspoon Worcestershire sauce
1 teaspoon liquid smoke
1/2 teaspoon South African Smoke seasoning
Add chicken, BBQ sauce, BBQ rub, Worcestershire sauce, liquid smoke and South African seasoning to the crock pot. Turn on low for 4 hours for fresh chicken and 6 hours for frozen. During the last hour, remove the chicken, shred it and bring it back to the crock pot for the remaining hour. Either microwave your sweet potatoes for 4-5 minutes for first potato and 2-3 more minutes for each additional potato or bake for 45-60 minutes in a 400 degree oven. Slice potato and fill with BBQ chicken, shredded cheese and a dollop of plain Greek yogurt. ENJOY!
