Breakfast Burritos

Who doesn't love a good breakfast burrito?  But who actually wants to make them often? Not me! I set aside one weekend morning and made a bunch of breakfast burritos to freeze. It doesn't take that much longer to make one or twelve once you have all the ingredients prepared. Hope you enjoy!

Start off by gathering up anything you want in your burritos. We used cheddar cheese, scrambled eggs, bacon, turkey bacon, turkey sausage and potatoes. Try to find fresh tortillas. The ones in the picture were awful.  They were dry, cracked when you tried to roll them, just all around no good.  We went and picked up some new ones after this picture was taken. 

Prep all your ingredients.  Cook your bacon to your desired crispness. Scramble your eggs.  Fry your potatoes.  Shred your cheese. Cook your sausage. Set everything aside in plates or bowls. 

Before you fill each burrito, warm up the tortillas in the microwave for a few seconds so they roll without cracking. Put your desired fillings in each burrito and roll up.

Stop right there if you're eating the burritos right away.  If you want to freeze them, wrap in Saran Wrap or aluminum foil.

If you put different combinations of fillings in each burrito, then be sure to label them.  I did "S" for sausage, "B" for bacon and "TB" for turkey bacon.  Place in a freezer zip-lock bag. 

To enjoy these after they are frozen, simply unwrap and microwave for 1:30-2:00 depending on the strength of your microwave. Mine works perfectly at 1:45. 

Be sure to play around with different meats, veggies, egg whites, cheeses and customize to your liking. 

Breakfast Burritos
Package of fresh tortillas (10-12)
10 eggs
1 cup shredded cheese
3 slices turkey bacon
3 slices bacon
1 cup turkey sausage
2 cups frozen sliced potatoes

Prepare your fillings.  Cook bacon to desired crispness. Scramble eggs. Fry potatoes.  Shred cheese.  Cook sausage. Place each ingredient in a plate or bowl.  Heat up tortillas in the microwave for a few seconds. Fill with desired fillings and roll burrito.

If freezing, wrap each burrito in Saran Wrap or aluminum foil.  Label and place in a freezer zip-lock bag. When ready to eat, microwave for a minute and a half to two minutes.
