Beef Stew



One of my best friends Holly gave me a beautiful dutch oven for a present awhile back.  I have made beef stew in the crock pot many times, but today I tried it out in my dutch oven.  It turned out just as delicious, but in half the time.  So if you either don't have a crock pot or you don't want to wait 6-8 hours for dinner, try out this yummy beef stew.

Tex-Mex Quinoa Bowl



Dan and I made those DELICIOUS Baked Taquitos a few days ago and wound up with a LOT of leftovers. We made more taquitos the next night and used up all the tortillas and chicken we had, but I still had a lot of sweet potatoes and black beans. I decided to whip up a yummy Tex-Mex bowl using quinoa and my leftovers.  I love created new dishes with leftovers to keep dinner interesting.

Baked Taquitos



Once again I busted out the crock pot for this dish. I am loving that the weather is allowing me to use both the crock pot and the oven! Phoenix during the summer is not the ideal place to bake. I have been seeing a lot of different taquito recipes online and decided to do my take on them. I love black beans and sweet potatoes and Dan loves shredded meat of any kind. I made today a shredded chicken and cheese taquito and a black bean, sweet potato, shredded chicken AND cheese taquito. Both were DELICIOUS!

Pumpkin Muffin Tops with Cream Cheese Frosting




I absolutely LOVE pumpkin everything! Who doesn't right? I have made many different pumpkin bars or muffins, some delicious and VERY unhealthy and some healthy and not very yummy. I finally found the perfect recipe...of course did a little bit of tweaking again to make it just right.

Balsamic Pork Tenderloin


Welcome to my first recipe! I love, love LOVE to bake and equally love to search on Pinterest. My problem is that I almost always tweak recipes I find, then can't remember what I tweaked the next time I search for the recipe. Therefore, I decided to start my very own recipe blog to keep track of my recipes and to share them with you. Problem solved!

I got my initial idea for this recipe from Let's Dish and changed just a few ingredients. I will try to always link to the original recipes to of course credit where I found the recipe (always cite your work!) and in case you prefer the original over mine. I change a lot of ingredients to either make a dish healthier, take out foods I'm allergic to, or cater to my oh so very picky boyfriend.

It's finally starting to be "fall" here in Phoenix and I've been dying to dust off my crock pot and start making some hearty fall dishes.
